You seriously can go wrong with this baked Mac n Cheese. One bite and your life will be changed forever! Make this
for your next Superbowl party, Thanksgiving dinner, or just for Wednesday night dinner everyone will love it!
Ingredients:
Base:
- 1 lb rigatoni
- half a stick butter
- 1/4 cup flour
- 4 cups whole milk
- 1 pint heavy cream
- 8 oz shredded cheddar cheese
- 4 oz Mozzerella
- garlic powder
- onion powder
- paprika
- Salt + pepper
Topping:
- 2 cups crushed Doritos (Nacho Cheese or Cool Ranch, your call but nacho cheese is better)
- 8oz shredded cheddar
- 4 oz Mozzerella
- half a stick melted butter
- 8 slices bacon (cooked crispy + chopped)
Directions
- Cook pasta: Boil pasta in salted water until al dente. About 10 minute occasionally stirring. Drain.
- Cook bacon: While pasta’s going, fry bacon until crispy. I prefer to cook my bacon in the oven at 400 degrees
for about 15-20 minutes. Just keep an eye on it. Or if you prefer stove top works too!
- Cheese sauce:
- Melt butter in a pot and whisk in flour until it looks like a paste. This is called a roux. The base of our
sauce.
- Slowly whisk in warm milk + cream. Let it thicken. Just about 5 min.
- Stir in garlic powder, onion powder, paprika, salt, pepper. Most recipies call for measurements. But I
believe in measuring with the heart and soul.
- Add 8oz of cheddar cheese and 8oz of mozzarella cheese by the handful while mixing until creamy.
- Combine: Mix pasta into the cheese sauce. Fold in the chopped bacon so it's baked into the mac. Pour into
greased 9x13 dish. I just use one of those cheap foil pans from the store. Easy to store and then you can throw
it out right after, easy cleanup!
- Topping:
- 8 oz of cheddar, the rest of your mozzarella (should be about 4 oz), and melted butter in a bowl.
evenly over the mac.
- Crush doritos over the top evenly while being careful to not crush them into a powder.
- Bake: 375 degrees for 25–30 min until bubbly and golden.
- Enjoy!
